This area is flush with wild berries around this time every year; blackberries, dewberries, I have heard of strawberries and blueberries as well. I’ve wanted to brew a lambic-style fruit beer for some time now and figured I would go ahead and use what is local to do that. I also figured that I would try and harness whatever yeast is on the berries around my house to ferment the beer. Solely. So I had my wife give me a few of the berries she picked to inoculate a small starter. I’ll step the starter up a few times over the course of, hopefully, a week and brew a 70/30 pils/unmalted wheat base to throw the “yeast” into.
I will continue to pick as many berries as I can over the course of the next year. I’ll freeze whatever I get so that I can add them to the base beer and hopefully have something worth drinking. Of course if the beer isn’t up to snuff I will not waste the hard-earned berries on the end result. That would just be a waste of good fruit, and lots of time. For now I just have to try and get a usable starter.
I’ll update the progress on this as I go along. Hoping to also use one of my barrels to start using as a sour starting vessel with this if things go right.
